Vegan sausage rolls
Serves: makes around 10
Allergens: soya, gluten, sesame, nuts, onion, garlic
Ingredients
For the filling:
125g pecans
Stale bread to make half cup (⅛ litre) (I toast some bread and use that if I don’t have any stale)
1 onion
300g silken tofu
1 cup rolled oats
1 stock-cube (veggie or beef style)
3 tablespoons soya sauce
1 garlic clove or 1 teaspoon of garlic powder
Ground pepper to taste
Other ingredients
3-4 puff pastry sheets
Vegan milk for brushing
Sesame seeds to put on top
Method
Use food processor to finely chop nuts, onion and tofu. Combine in mixing bowl with all of the other ingredients for the filling.
Pre-heat oven to 200 degrees or GM6, grease 2 baking trays.
Cut or roll sheets into long rectangles, spoon filling down the middle, brush one side of the pastry with vegan milk and roll it up so the milk side is on top, sticking the sausage roll together
Use a knife to cut the sausage roll into sections of desired length ..
Put a cross on top in the pastry, brush with vegan milk and sprinkle with sesame seeds.
Put in trays in the oven and bake for 20 mins until golden brown on the top.
